Blueberry Breakfast Pudding
Left over bread of any sort, white, wheat, french, etc. cut up into small pieces, at least 12 cups worth
3 cups of frozen or fresh blueberries
2 cups milk
8 eggs
1 tsp cinnamon
1 tsp vanilla
1/4 tsp nutmeg
vanilla yogurt
* Grease a 9 x 13 pan and preheat oven to 350 degrees. In a large bowl place the eggs , milk, vanilla, and spice. Stir until eggs are blended. Add in the bread and toss until the bread is moistened and milk/egg mixture absorbed. It should not be dry, but a little runny. Place pudding in the dish and bake for about 40 min or so until egg mix is cooked thru. Serve hot and dallop with a spoonful of yogurt!
YIELDS: Enough for 6 adults
Old Fashioned Snickerdoodles
1/2 cup butter ( margerine just won't do)
1/2 cup butter flavored shortening
1 1/2 cup sugar
2 eggs
*** Beat these ingredients together until creamy *****
In a seperate bowl add
2 2/3 cup flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
**** Mix all the dry ingredients *** Add the dry ingredients to the egg & sugar mix and blend *****
Roll the dough into small balls, then dip in a sugar and cinnamon, and place on greased cookie pan.
Place in a preheated 400 degree oven. Bake for aprx. 8 minutes until crackled on top and lightly browned on bottom.
YIELDS: 3 dozen

That blueberry pudding sounds fantastic, I wish I could make some right now. I will definitely try it.
