Dinners/Leftovers for Lunch

Chicken and Rice Soup. (little chicken LOTS O' Veggies)

NV: Lasagna and Garlic Bread (company night)

Goals next week: Figure out what lentils and quinoa are and where you get them LOL!!!

Oh and last week I said "Vegan" I meant Vegetarian. I finding there is a BIG difference and we won't be cutting out dairy products :)

Sounds like a great start!

You are doing the right things - we have not eaten meat in almost 5.5 yrs and don't miss it on our plates ever!

We LOVE rice and beans. We LOVE soups and salads! We love pasta (GF) and veggies! We eat a wide variety of things too!

God's creation of fruits and veggies NEVER get boring!

We make great lentil tacos (recipe is on allrecipes.com "tasty lentil tacos"). Also, lots of Indian recipes with lentils---try some mildly spiced with some brown basmati to wean yourselves if the idea of spicy Indian food scares you or your kids!

Anju's favorites are beans, though--kidney, garbanzo, navy, brown, you name it! Curried or sweet--delicious!

We've found that eating Indian food often is very healthy all around. The spices are excellent for you, the beans/lentils/veggies are just what our body needs and it is very inexpensive. I think all that curry and chili has kept my sinuses clear this winter!

Maybe you've already found lentils? They should be at any grocery in the bean section. I have a delicious EASY and healthy lentil soup recipe if you're interested:) Julie S.
