SO what do you eat?

I have noticed in the past month, when you tell people that you have switched to a vegetarian/mostly organic diet that the question to follow is......So what do you eat?

Thought I share some of what we are trying :)
Whole Wheat Pasta/No HFCS Spaghetti Sauce
Can of Organic Tomatoes
Zucchini and Red Peppers Sauteed and put on top.
Garlic Bread too!

Yummy! Zucchini and eggplant bake up awesomely together lasagna-style (w/w noodles). Add organic tomato sauce w/ italian herbs mixed in, ricotta and mozzarella and........mmmmm!
